A typically Sicilian soft cheese, known as primo sale because of the salting and the short aging time.
Made exclusively with sheep’s milk, the fresh pecorino cheese has a milk taste, enhanced by the intense aroma of black pepper. The marks left by the basket are visible on the cheese’s cylindrical shape with flat faces.
