We make our canestrato cheese with almonds from sheep’s and cow’s milk and whole almonds, according to Sicily’s dairy tradition. The result is a fragrant cheese with a sweet taste, where the softness of the cheese itself and the crunchiness of the almonds create a delightful contast in consistencies. Ideal to be eaten raw, the canestrato cheese with almonds pairs well with other typical Italian cheeses as part of a cheese platter.
