A Sicilian soft cheese from sheep’s and cow’s milk. The fresh canestrato cheese has a cylindrical shape with flat faces, on which it is possible to see the marks left by the basket. The short aging time gives Sicilian pecorino cheese a sweet, milk taste and a soft consistency, making it easy to slice it.
