A traditionally Sicilian soft cheese, made from sheep’s and cow’s milk, enriched with the strong flavor of black pepper. The term canestrato derives from the baskets (canestri) used to shape it, whose marks can be seen on the surface of the product. The short aging time gives the Sicilian canestrato cheese a sweet milk flavor and a soft consistency, while the black pepper grains make for a strong spicy note.
