It’s our most aged version of the pecorino cheese, made with sheep’s milk, rennet, salt and lactic ferments only. The simple, artisanal processing, which we have always put in place at our cheese factory, gives this Sicilian cheese an authentic flavor, savory and strong. At the sight, it has an intense straw yellow color, with the marks on the surface left by the basket used to shape it.
Ingredients: Pasteurized sheep’s MILK, salt, rennet and lactic ferments.
