Provola is one of the typical cheeses of the Sicilian dairy tradition. It is characterized by the characteristic filiform profile, topped by the head to which the string is tied for aging. The fresh provola cheese from our dairy has a tender texture and a delicate milk taste. We prepare it using only milk from small local farms, while production is inspired by artisanal methods.
