La Cava’s aged provola “sfoglia”

La Cava’s aged provola is a stretched curd cheese from Sicilian cow’s milk, made according to tradition and seasoned for at least two months. As it is processed with artisanal methods by the cheesemaker, during aging its signature cracks appear on the cheese’s surface, hence the name “provola sfoglia” or “provola sfogliata”. Compared with other provola cheeses, both fresh and aged, this kind has a savorier taste and a more compact dough, marked by eyes.

 

Ingredients: Pasteurized MILK, rennet, salt and lactic ferments.

Origin of milk: Italy – 100% Sicily

The product can be used as an ingredient in food preparations or consumed “uncooked”, as in the typical Italian cheese tradition.
