La Cava’s aged provola is a stretched curd cheese from Sicilian cow’s milk, made according to tradition and seasoned for at least two months. As it is processed with artisanal methods by the cheesemaker, during aging its signature cracks appear on the cheese’s surface, hence the name “provola sfoglia” or “provola sfogliata”. Compared with other provola cheeses, both fresh and aged, this kind has a savorier taste and a more compact dough, marked by eyes.
